OnePot Chicken Fajita

A hearty chicken and rice skillet with colorful vegetables, melted light cheese, and fresh lime and parsley on top. It’s a filling, flavorful meal that works well for meal prep.
600 g ChickenBreast fillet
1 tbsp Olive oil
200 g Riceuncooked
1 Onion
2 GarlicGloves
3 Bell peppers
3 Tomatoes
2 tbsp Tomato paste
600 ml Vegetable broth
100 g CheeseLight grated
Parika powder
1 Lime
Fresh parsley

Dice the bell peppers, tomatoes, and onion.

Heat the olive oil in a large pan and brown the chicken. Remove it from the pan and set aside.

Sauté the garlic and onion in the same pan.

Add the bell peppers, tomato paste, and tomatoes.

Pour in the vegetable broth, then add the uncooked rice and season with salt, pepper, and paprika powder.

Simmer for about 15–20 minutes.

Return the chicken to the pan, top with the grated cheese, and cook for another 5 minutes until the cheese has melted.

Garnish with lime and parsley before serving.
